Clean Recipe Challenge

We had a great turn out for the 1st clean recipe challenge and some amazing food!!! We've decided we had so much fun and so much good food we'll be having another one in 3 months, I as Mikeys going away party. Keep that in mind.

I will be adding the recipes from the challenge to this site as they come in if you haven't given me your copy please do that soon we have some eager CrossFitters waiting for those things.

1st place winner
Sheryls avacado/shrimp salad
1 lbs. cooked salad shrimp
4 ripe avacados
3/4 C lime juice
1/4 C chopped red onions
1 tbsp. garlic minced
1/4 C chopped cilantro

Soak shrimp in lime juice and garlic overnight. Turn shrimp a few times to make sure they all get enough lime flavor. Chop avacados and combine onion and cilantro. Drain all lime juice and mix shrimp w/avacados. Top with your favorite salsa, great with sweet potato chips or on a salad.

Carley's Mediterranean Salad
2 cucumbers peeled and sliced
4 Ripe Tomatos
1/4 C Balsamic Vinager
1/2 Red onion Minced
Drizzle of honey
Pepper
No salt seasoning from costco to taste
Mix everything together and enjoy!

Sheryl and Tracy Shrimp Kabobs
2 lbs shrimp
1 sweet onion
1 red and orange bell pepper
1 lrg or 2 sm zucchini
1 pkg. matural direction uncured bacon/cut after cooked
3/4 C pineapple juice
1/4 C olive oil/for veggies
1 1/2 tbsp. mccormick roasted garlic and herb seasoning
dash of celery salt
12-15 wooden skewers soaked in water
Peel and rinse shrimp, place in bowl with McCormicks seasonings and pineapple juice for 2 hours. Fry bacon until cooked, but not crisp. Cut each slice into 4 peices, cut beggies into chunks. Mix olive oil, garlic salt and celery salt with veggies and skewer beggies and with each shrimp put 1 cut peice of bacon. Cook on grill until shrimp turns pink.

Sheryls Mango Pico De Gallo Chicken
4 ripe tomatoes chopped
1 1/2 fresh mangos chopped
1 anaheim pepper minced
1 jalapeno minced
1/2 sweet onion
1/4 C cilantro minced
mix ingredients together and store same day you bake chicken.
1/2 C fresh garlic
12 peices chicken tenders
2 tbsn olive oil
Put chicken in ziploc bag over night with fresh garlic in fridge. Next day dump olive oil in bottom of pan and place chicken on top sprinkle lightly with salt and pepper bake in ove at 350 degrees until chicken is cooked thoroughly - put fresh mango pico on top and serve - great with mashed sweet potatoes.

Larrys battered fish
1-2 pounds fish fillets or steaks fresh or frozen
1/2 cup almond milk
1 teaspoon salt
1 1/2 cups almond flour
1/4 cup oil Thaw frozen fish. Cut fish into portions. Combine milk and salt. Dip fish in milk and roll in almond flour. Place fish in a single layer on a well greased baking pan. Pour oil over fish. Bake in an extremely hot oven, 500 degrees, for 10-15 minutes or until fish are brown and flake easily when tested with a fork. I used cod, for the oil I used olive oil. With the blanched almond flour, the fish pieces might not turn brown, but they should be done in 10-15 minutes. Reply Forward
